  • 6 pieces Paper-thin slices of Smocked ham
  • gr 250 Potatos
  • gr 100 Porcini Mushrooms
  • Flour
  • Butter
  • Extra virgo olive oil
  • a glass Dry Whtie Wine
  • 1/3 glass water
  • leaves of Rosemary
  • little branch of sage
  • Salt
  • pepper

DescriptionDescription  Enriched great plate from the taste of mushrooms porcini and the smoked ham, seasoned for 22 weeks.
InstructionsInstructions  To clean up and to cut the mushrooms porcini in little strips. Warm in one frying pan an olive oil spoon. Let's jump the mushrooms for several minutes (if they are deeps freeze Do you do about for 15 minutes) until turn out tender but neither flabby neither it burns. Before extinguishing taste it with salt and pepper. Cut in little strips the potatos and Jump them for 10/15 minutes in one frying pan with two spoons of olive oil, the leaves of rosemary and some leaves of sage (.. it's better that you conserve the smaller for guarnire the plate). Spread on a chopping board the 6 Paper-thin slices of Buffalo beef and over each one put the smoked ham. To put one strip of mushrooms at the beginning of every paper thin and roll up. To fix with one toothpick every rolled meat. Pass every "rolled maet" in a plate with flour. Shake it delicately in order to remove the flour in excess. Warm a little piece of butter in a frying pan. Brown the "rolled maet" for 2 or 3 minutes. Bath the meat with 100 ml of white wine white and cook all for approximately 4 or 5 minutes. The dense obtained sauce will help to taste the little potatos. Wisk (better homogenize) the remained mushrooms with 50 ml of white wine and 50 ml of warm water. The obtained compound will serve to taste the "rolled meat". To serve the "rolled meat" with the little potatos, the sauce and some leaves of sage.
NotesNotes  The fungi go preferibilmente cleaned up without to wash them; it is necessary to one by one pass them with one soft spazzolina or a humid cloth and to abrade the stem with a small knife.
